The peaks and valleys of the texture in the icing has different food color at different sides and angles. So when you look at the cake from one side you see the food color applied to those facets and as the cake is turned revealing a different facet of the texture with a different color on it, it appears as of the cake is changing colors when you are actually seeing the other side of the texture with a different color.
